How are mandarins segmented and pith removed before they are tinned ?

How is the thin membrane on mandarins segments removed before they are tinned ?

 Answer
The mandarins are prepared by lye peeling. Segments are peeled using a chemical process. First, the segments are scalded in hot water to loosen the skin; then they are bathed in a lye solution, which digests the membranes. Finally, the segments have  several rinses in plain water.
